I first heard of Rosehip Jam from Rosemary Gladstar. She passed around a jar of herbal, sweet jelly, and I couldn't believe how simple it sounded to make! Rosehips and apple juice -- a recipe made for truly anyone, no matter how busy. 🌹🍎

What are the Benefits of Rosehips and Apple Juice?

Rosehips are the fruit of the wild rose plant and are packed with vitamin C, antioxidants, and essential nutrients. They have been used for centuries to support immune health and promote overall well-being. Apple juice, on the other hand, adds a touch of sweetness and natural flavor to the jam, making it even more delightful. Both plant fruits are high in naturally-occurring pectin content... Yes, the same pectin that's isolated, powdered and used to thicken jams! Bonus fun fact and health benefit: pectin is made of polysaccharides, which are the sugar molecules that your gut bacteria *love* to feed on, making this jam a treat not only for you, but for your intestinal garden. 🦠 🌟 🍯 

What You'll Need:

To make this delicious rosehip jam, you'll need the following ingredients:

  • 2 cups of dried rosehips
  • 4 cups of apple juice
  • Herbs & spices to taste (cinnamon or a bit of jaggery perhaps)

Step-by-Step Instructions:

The recipe is simple! Fill a clean glass quart jar half-full of rosehips. Fill the jar with apple juice (preferably unfiltered), cap and let sit on the counter overnight. The natural pectins will thicken your jam naturally! 🍎 🌹 🪄 

Your homemade rosehip jam is now ready to be enjoyed! Spread it on toast, scones, or use it as a filling for pastries. The possibilities are endless! 🍞🥐
